Regular lemons make delicious tart juice. You can also use Meyer lemons, which are a little more sweet.

Look for lemons about the same size. They don't need to be the prettiest lemons. A few bruises or scratches are okay.

Room-temperature lemons will juice better than cold ones. You can also microwave them for 10-15 seconds before juicing.

Keep fresh lemon juice in a jar in the fridge or freeze it in an ice cube tray for future use.

Zest a lemon before cutting it and juicing it. It is much safer to zest a whole lemon.
