13 Fast-Food Items That Started Locally or in Test Markets

A lot of fast food’s biggest hits didn’t start as national plans. They started as one franchise owner’s fix for a slow Friday, or a test-market bowl nobody outside Pittsburgh had tried yet. These 13 items made that same jump, from local menus or select test markets to nationwide release.

Filet-O-Fish

In 1962, Cincinnati franchise owner Lou Groen created a fish sandwich. His Friday sales had dropped in a largely Catholic neighborhood. McDonald’s tested it against Ray Kroc’s pineapple-and-cheese Hula Burger. The fish sandwich won 350 sales to six. It joined the national menu in 1965.

Chick-fil-A’s Original Chicken Sandwich

Before Chick-fil-A was a national chain, Truett Cathy worked on the sandwich at the Dwarf Grill in Hapeville, Georgia. He tried different seasonings. He also asked customers for feedback. The final sandwich paired pressure-cooked chicken with a buttered bun and pickles.

McRib

McDonald’s debuted the McRib in Kansas City, Kansas, in 1981. It started there as a regional favorite. The pork sandwich later became a recurring limited-time item at participating McDonald’s restaurants nationwide.

The Blizzard

St. Louis-area Dairy Queen operator Samuel Temperato drew on local frozen-custard ideas for the Blizzard. He added candy and cookie pieces to soft serve. The dessert reached Dairy Queen menus nationwide in 1985. It became closely tied to the chain.

Stuffed Crust Pizza

Pizza Hut food scientist Patty Scheibmeir spent about two and a half years working out the cheese and dough for Stuffed Crust Pizza. In 1994, the pizza was tested in a couple of markets as Mama Lorelli’s Stuffed Crust Pizza. Pizza Hut released it nationwide in March 1995.

Doritos Locos Tacos

Taco Bell spent a year testing Doritos Locos Tacos in Bakersfield and Fresno in California plus Toledo, Ohio. One out of every three purchases in those markets included one. Taco Bell launched it nationally in March 2012. The company called it its biggest product introduction in history.

Impossible Whopper

Burger King began testing the Impossible Whopper at 59 restaurants in and around St. Louis in April 2019. Four months later, the plant-based burger went nationwide. About 7,000 U.S. locations offered it for a limited time beginning August 8.

Wendy’s Pretzel Bacon Cheeseburger

Wendy’s ran six-to-eight-week tests in Miami, Cleveland and Sacramento. The burger ranked among the chain’s strongest test-market items. After the results, an analyst upgraded Wendy’s stock. A wider rollout followed, with U.S. and Canadian restaurants set to have it by July 4, 2013.

Popeyes Chicken Sandwich

Popeyes perfected the sandwich in Miami and tested details before launch. The Miami Herald reported that a Houston franchise became the first test location in May 2019. Popeyes then took the sandwich nationwide on August 12.

Ch’King

Burger King spent two years developing its hand-breaded Ch’King. It tested the sandwich before a wider launch. The chain said positive test feedback helped push the release forward. The Ch’King reached restaurants nationally on June 3, 2021.

KFC Smash’d Potato Bowls

KFC tested Smash’d Potato Bowls in Pittsburgh in 2023. The bowls combine mashed potatoes with fries, cheese sauce, bacon crumbles, and a three-cheese blend. After that successful test run, KFC put them on menus nationwide on January 29, 2024.

Arby’s Steak Nuggets

Arby’s tried Steak Nuggets in Tulsa, Grand Rapids, Orlando, Jacksonville, and Green Bay in spring 2025. After the select-market test, the smoked, bite-size steak pieces went nationwide for a limited run on October 6.

Chick-fil-A Chicken & Waffles

Chick-fil-A’s Chicken & Waffles offerings had a limited-time test in 2025. On August 24, 2026, the chain took both breakfast and larger entrée versions nationwide for a limited fall run.

From Test Market to National Menu

The next weird limited-time item at your local drive-thru might not be a gimmick. It could be the test run for what’s on every menu in the country next year. Pay attention to what’s only available near you. You might be tasting the future before anyone else does.
